I never order crepes when we go out to eat because a) very few places in Kingston make them and, b) they definitely contain milk and I have a bad habit of leaving my lactaid at home. And for those of you thinking “Why don’t you just order pancakes (and remember your lactaid)?” The answer is: no thanks. I’m not really into a thick fluffy pancake, I prefer the slightly chewy texture and thin layers of a crêpe which provide a better ratio of backdrop to toppings/filling. I was looking at my pictures from last year’s trip to Europe and came across this one of a classic French indulgence from Le Petit Jardin du Cévenol while on a short day trip to Anduze. And I did remember my lactaid that day thank god: a chocolatey, nutty filling that slowly melted in between layers of whisper-thin, eggy crepes, perfectly complemented by a dark espresso. This time of year, it take almost no time at all to compose a satisfying snack: a few slices of watermelon on the back deck, a juicy peach dribbling down my chin, a handful of blueberries on some homemade yogurt. On the savoury side of things, I’ve definitely been leaning heavily on thick slices of tomatoes from our CSA, a fat pinch of salt, some olive oil and balsamic, simple on some toasted sourdough. For breakfast or lunch I’ll add a poached egg, greens, avocado, goat cheese, maybe some grilled/sauteed veg if I’m feeling ambitious. It doesn’t take much to translate this simple late-summer snack into a meal. I think it’s best to not let things get too complicated flavour-wise or by the number of ingredients. Tomatoes, herbs, and cheese are a timeless trio, especially served up on any kind of carb-y vessel. A little seasoning, some roasted onions, and labneh transform these individual ingredients into a greater whole which totally sings of summer. Seems the April showers are a bit delayed this year, but I really don’t mind. I love the gloomy grey skies, getting to wear big boots and my bright yellow rain jacket, and how fresh all the rain makes the air feel. Plus it definitely helped our garden along: I came back from a week-long family vacation in the Dominican Republic only to discover some giant rhubarb, loads of mint and lemon balm, and some asparagus and garlic sprouting out of the earth!

Lately I’ve been getting my dose of world news from an unexpected place: the gym. I’ve been trying to get into running, so a couple days a week I find myself running in place staring at a TV (best case: watching the CBC, worse case: watching one of apparently a million poker tours). Throughout the process of piecing together the headlines, sublines, and closed captioning, I’ve become increasingly aware of my minor outbursts while watching the news. And by outbursts, I mean the occasional gasp or very audible “UGH” in disbelief at whatever asinine views or proposals the Trump administration is presenting that day. His plan to better fund the Department of National Defence (aka build the border wall) in his just-released budget means drastic cuts across the board, most significantly to the Environmental Protection Agency. I’m finding it a bit startling that it’s already mid-February. It seems like my winter hibernation is flying by. On the one hand, I can’t wait to step outside one morning and remember what it’s like to feel the sun’s warmth, not wear quite so many layers, and stop feeling this constant chill in my bones. I keep thinking about how beautiful our yard looks when everything is in bloom. We are taking turns flipping through the seed catalog, deciding on how to improve on last year’s garden, and we just signed up for our CSA.  But truthfully I’m also really savouring this time of year. I know it’s fairly dark and gloomy, and we’re all tired of trudging through the snow and biting winds. I do however love staying inside and watching the snow fall (like the crazy amount we got last Sunday), having hot chocolate and marshmallows, and catching up on reading the ever-growing stack of books beside my bed. I know, a sandwich. What a terribly mundane idea for a blog post. BUT. This sandwich is different, I swear. I wrestle with myself over recipe ideas all the time, thinking “it’s been done” or “it’s boring” or “who needs a recipe for that?” or “how interesting could a vegetarian sandwich be without cheese?!”. This blog is supposed to represent foods that I like to eat regularly; sandwiches definitely fall into that category, so I unashamedly present to you my take on a pan bagnat. People have this idea in mind that vegetarian/vegan food is supremely bland or uninteresting; while that may be true of some stuff, I hope this sandwich proves otherwise. When I think about food options that I wish existed in Kingston, this type of food comes to mind. I want something fairly wholesome, inexpensive, with a lot of flavour. I was toying around with this recipe a little while ago when it seemed that spring was first upon us, but now it’s almost officially summer. Time moves so fast! I’m trying to ground myself in the here and now by enjoying the abundance of wild green things in our garden, nibbling on the slowly ripening blackberry bush (!!), and making iced tea with the absurd amount of lemon balm and mint we have going on. Summer is treating us pretty well so far: we’ve been strawberry and raspberry picking, taken some time to relax in the county, and celebrated my older brother’s wedding a couple weeks ago! With many types of produce having such short growing seasons, it’s easy to feel like you’re constantly behind as a food blogger during the spring and summer months. It seems like people move so quickly to post about the next available produce that I perpetually feel like I’m behind, looking at other bloggers’ recipes for peach this or red currant that, while I’m still daydreaming about strawberry rhubarb pie.
